- 2 tbsp hot sauce
- 1 tbsp Dijon mustard
- 1 tbsp honey
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp Worcestershire sauce
- 1 tbsp lemon juice
Instructions
-
Prepare the fries: If using fresh potatoes, cut them into fries and soak in cold water for 30 minutes. Drain, pat dry, toss with cornstarch, and coat with oil.
-
Cook the fries:
- Oven: Bake at 425°F (220°C) for 25 minutes, flipping halfway.
- Air Fryer: Cook at 375°F (190°C) for 15-18 minutes, shaking the basket every 5 minutes.
- Deep Fryer: Fry at 350°F (175°C) for 3-4 minutes, then drain.
-
Make the seasoning: Mix all Cajun spices in a small bowl.
-
Make the sauce: Whisk mayonnaise, hot sauce, mustard, honey, garlic powder, paprika, Worcestershire sauce, and lemon juice in a bowl.
-
Assemble the fries: Toss the hot fries with the voodoo seasoning. Spread them on a plate and top with cheddar and Monterey Jack.
-
Melt the cheese: Place under a broiler for 1-2 minutes for extra meltiness.
-
Add toppings and serve: Sprinkle with bacon or andouille sausage, drizzle with voodoo sauce, and garnish with green onions and jalapeños. Serve hot.
Notes
- For extra crispy fries, fry them twice—first at a lower temperature, then again at high heat.
- Adjust the spice level by increasing or decreasing the cayenne and hot sauce.
- Store leftovers in an airtight container for up to 2 days. Reheat in the oven or air fryer for best results.
