Description

For the Fries:

  • 2 large russet potatoes (or 1 lb frozen French fries)
  • 2 tbsp cornstarch
  • 3 tbsp vegetable oil
  • Salt, to taste

For the Voodoo Seasoning:

  • 1 ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp salt

For the Toppings:

  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ cup cooked bacon or andouille sausage (optional)
  • ¼ cup chopped green onions
  • ¼ cup pickled jalapeños

For the Voodoo Sauce:

 

  • ½ cup mayonnaise
  • 2 tbsp hot sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp Worcestershire sauce
  • 1 tbsp lemon juice

Instructions

  1. Prepare the fries: If using fresh potatoes, cut them into fries and soak in cold water for 30 minutes. Drain, pat dry, toss with cornstarch, and coat with oil.

  2. Cook the fries:

    • Oven: Bake at 425°F (220°C) for 25 minutes, flipping halfway.
    • Air Fryer: Cook at 375°F (190°C) for 15-18 minutes, shaking the basket every 5 minutes.
    • Deep Fryer: Fry at 350°F (175°C) for 3-4 minutes, then drain.
  3. Make the seasoning: Mix all Cajun spices in a small bowl.

  4. Make the sauce: Whisk mayonnaise, hot sauce, mustard, honey, garlic powder, paprika, Worcestershire sauce, and lemon juice in a bowl.

  5. Assemble the fries: Toss the hot fries with the voodoo seasoning. Spread them on a plate and top with cheddar and Monterey Jack.

  6. Melt the cheese: Place under a broiler for 1-2 minutes for extra meltiness.

  7. Add toppings and serve: Sprinkle with bacon or andouille sausage, drizzle with voodoo sauce, and garnish with green onions and jalapeños. Serve hot.

Notes

  • For extra crispy fries, fry them twice—first at a lower temperature, then again at high heat.
  • Adjust the spice level by increasing or decreasing the cayenne and hot sauce.
  • Store leftovers in an airtight container for up to 2 days. Reheat in the oven or air fryer for best results.
