Ingredients
- 1 cup yellow cornmeal (fine grind)
- 1 cup all-purpose flour
- ¾ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- ½ cup unsalted butter, melted
- 1 tablespoon honey (optional)
- Additional butter for brushing top
Instructions
- Preheat oven to 400°F (200°C) and grease a 9-inch baking dish or cast iron skillet.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk eggs, buttermilk, melted butter, and honey if using.
- Combine wet and dry ingredients and stir until just mixed. Do not overmix.
- Pour batter into the prepared pan and smooth the top.
- Bake for 25–30 minutes, until golden and a toothpick comes out clean.
- Brush the top with additional melted butter.
- Let cool for 10 minutes before slicing and serving.
