Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- 1 cup pumpkin puree (not pumpkin pie filling)
- ¾ cup granulated sugar
- ½ cup brown sugar, packed
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup milk (or dairy-free alternative)
- Optional: ½ cup chocolate chips, chopped walnuts, or dried cranberries
Instructions

Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.

In another bowl, mix the pumpkin puree, granulated sugar, brown sugar, oil, eggs, vanilla extract, and milk until smooth.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.

If using mix-ins, fold them in gently.

Pour the batter into the prepared loaf pan and spread evenly.

Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.

Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

Notes
For a richer flavor, replace vegetable oil with melted butter or coconut oil.
To make a healthier version, substitute half the flour with whole wheat flour.
For added crunch, sprinkle a handful of pumpkin seeds on top before baking.
