Ingredients

2 tbsp cornstarch

Blue Vanilla Buttercream:
1 ½ cups unsalted butter
5 cups powdered sugar
3 tbsp heavy cream
2 tsp vanilla extract
Blue gel food coloring (sky/turquoise/electric)
Decoration:
Fondant Stitch topper
Edible hibiscus flowers or floral accents
Toasted coconut flakes
Green fondant or buttercream for leaves
Optional: piping gel for ocean effect
Instructions
- Preheat oven to 350°F (175°C). Prepare three 8-inch pans.
- Whisk dry ingredients together in a bowl.
- Cream butter and sugar until fluffy. Add eggs one at a time.
- Mix in coconut milk, buttermilk, and vanilla.
- Add dry ingredients and fold gently. Divide batter into pans.
- Bake 30–35 minutes. Cool completely.
- Cook pineapple, juice, sugar, and cornstarch over medium heat. Let thicken and cool.
- Beat butter for buttercream, add sugar, cream, and vanilla. Color with blue gels.
- Assemble: layer cake, buttercream, and filling. Chill, then frost with blue buttercream.
