Description

A comforting and hearty twist on traditional lasagna, Lasagna Soup brings all the delicious flavors of lasagna into a bowl of soup. Ingredients

  1. Brown the ground beef in a large pot or Dutch oven, draining any excess fat.
  2. Sauté the chopped onion in the same pot until softened. Add garlic and cook for 1 minute.
  3. Stir in crushed tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring to a simmer.
  4. Add broken lasagna noodles and cook until tender, about 10 minutes.
  5. Stir in ricotta and mozzarella cheese until melted and creamy.
  6. Serve hot, topped with Parmesan cheese and fresh herbs.

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 8 oz lasagna noodles (broken into smaller pieces)
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Notes

  • For a thicker soup, cook the noodles separately and add them at the end.
  • Add a splash of red wine after browning the meat for extra depth of flavor.
