  • 2 lbs bone-in chicken thighs or drumsticks
  • 2 tablespoons Jamaican curry powder
  • 1 Scotch bonnet pepper, finely chopped (adjust to taste)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 scallions, chopped
  • 1 medium onion, chopped
  • 1 teaspoon dried thyme or 2 teaspoons fresh thyme
  • 1/2 teaspoon allspice
  • 1 cup coconut milk or water
  • 2 tablespoons vegetable oil
  • Salt and black pepper to taste


Instructions

  • Marinate chicken with curry powder, garlic, ginger, scallions, Scotch bonnet pepper, salt, and pepper for at least 20 minutes.
  • Heat oil in a pot over medium-high heat; brown chicken on all sides, then set aside.
  • Sauté onions, garlic, ginger, and scallions until soft.
  • Add extra curry powder, thyme, and allspice; toast briefly.
  • Return chicken to pot, add coconut milk or water to cover halfway.
  • Simmer covered on low for 40-45 minutes, stirring occasionally.
  • Adjust seasoning, remove from heat, and rest for 5 minutes before serving.

Notes

Marinating overnight enhances flavor.

Use coconut milk for a creamier curry.

Adjust Scotch bonnet pepper quantity to control heat.
