Ingredients
- 1.5 lbs boneless skinless chicken thighs, chopped
- Salt and pepper to taste
- 1 tsp smoked paprika
- 1 tbsp neutral oil
- 1 cup jasmine rice
- 1/2 cucumber, thinly sliced
- 1 carrot, shredded
- 1/4 red onion, thinly sliced
- 2 tbsp apple cider vinegar
- 1 tsp sugar
- 1 clove garlic, minced
- 1 tbsp butter
- 1/3 cup honey
- 1.5 tbsp hot sauce (adjust to taste)

Instructions
- Rinse and cook jasmine rice according to package. Keep warm.
- Quick-pickle onions in vinegar, sugar, and salt. Let sit 15 minutes.
- Season chicken with salt, pepper, and paprika.
- Sear chicken in oil over medium-high heat until golden and cooked through. Remove from pan.
- In same skillet, sauté garlic in butter, then stir in honey and hot sauce. Simmer until thickened.
- Return chicken to skillet, toss to coat in glaze.
