Instructions

  1. In a medium bowl, whisk together the egg yolk, mustard, lemon juice, and salt until well combined.

  2. Slowly add the oil drop by drop while continuously whisking. Once the mixture begins to thicken, continue adding oil in a slow stream.

  3. Keep whisking until the mayo is thick, creamy, and smooth.

  4. Taste and adjust with more lemon juice or salt as needed. If the mayo is too thick, add a teaspoon of water.

  5. Store in an airtight container in the fridge for up to one week.

Notes

  • Make sure to use room-temperature ingredients for the best results.
