A light, creamy, and protein-packed alternative to traditional chicken salad. This recipe swaps mayonnaise for tangy Greek yogurt while keeping all the delicious flavors and textures you love. Perfect for sandwiches, wraps, or as a healthy salad topper!


Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • ½ cup plain Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp honey
  • ½ cup celery, diced
  • ¼ cup red onion, finely chopped
  • ½ cup grapes, halved (or ½ cup diced apple)
  • ¼ cup almonds or walnuts, chopped
  • 2 tbsp fresh herbs (parsley, dill, or chives), chopped
  • Salt and black pepper, to taste

Instructions

  1. Prepare the Chicken: Shred or dice cooked chicken.

  2. Make the Dressing: In a bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, and honey. Season with salt and pepper.

  3. Chop and Add the Mix-Ins: Dice celery, red onion, grapes/apples, and nuts.

  4. Combine Everything: Toss the chicken, mix-ins, and dressing together until well-coated.

  5. Adjust and Serve: Taste and adjust seasoning if needed. Chill for 20 minutes before serving.

Notes

For extra flavor, add a pinch of garlic powder or smoked paprika.

Serve in sandwiches, lettuce wraps, or over greens.

Can be made ahead and stored for up to 3-4 days in the fridge
