- 2 English muffins (whole wheat or classic)
- 2 eggs
- 1/2 cup shredded mozzarella cheese
- 1/4 cup diced bell pepper
- 1/4 cup diced onion
- 1/2 cup spinach leaves
- 2 strips cooked bacon (optional)
- Olive oil for drizzling
- Salt and pepper, to taste
- 1/2 tsp dried oregano
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the English muffins in half and place them on a baking sheet.
- Drizzle each muffin half with olive oil.
- Top each muffin half with a layer of shredded mozzarella cheese.
- Crack one egg on top of each muffin half.
- Add the diced bell pepper, onion, spinach, and bacon on top of the eggs.
- Season with salt, pepper, and oregano.
- Bake for 8-10 minutes, or until the egg yolks are set and the cheese is melted.
- Garnish with fresh basil and serve.
