Ingredients

  • 2 English muffins (whole wheat or classic)
  • 2 eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • 1/2 cup spinach leaves
  • 2 strips cooked bacon (optional)
  • Olive oil for drizzling
  • Salt and pepper, to taste
  • 1/2 tsp dried oregano
  • Fresh basil for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • Slice the English muffins in half and place them on a baking sheet.
  • Drizzle each muffin half with olive oil.
  • Top each muffin half with a layer of shredded mozzarella cheese.
  • Crack one egg on top of each muffin half.
  • Add the diced bell pepper, onion, spinach, and bacon on top of the eggs.
  • Season with salt, pepper, and oregano.
  • Bake for 8-10 minutes, or until the egg yolks are set and the cheese is melted.
  • Garnish with fresh basil and serve.
