Ingredients

Scale

1 cup oat flour (or whole wheat flour)

1 tsp baking powder

1 ripe banana, mashed

¼ cup natural peanut butter (xylitol-free)

¼ cup unsweetened applesauce or plain yogurt

2 eggs

½ cup shredded carrots

Frosting:

½ cup plain Greek yogurt

2 tbsp peanut butter (xylitol-free)


Instructions

  • Preheat oven to 350°F (175°C). Grease or line a 6-inch cake pan.
  • In a large bowl, whisk oat flour and baking powder.
  • In another bowl, mix banana, peanut butter, applesauce (or yogurt), and eggs until smooth.
  • Combine wet and dry ingredients. Fold in shredded carrots.
  • Pour batter into the pan and smooth the top.
  • Bake 25–30 minutes, until a toothpick comes out clean.
  • Cool in pan for 10 minutes, then on a wire rack until completely cool.
  • Mix frosting ingredients. Spread or pipe onto the cooled cake. Decorate as desired.

Notes

Always double-check peanut butter for xylitol.

Substitute pumpkin for applesauce or yogurt if needed.

Freeze extra slices for later celebrations.

Serve small portions — even healthy treats should be limited.
