Ingredients
- 2 cups cooked chicken, diced or shredded
- ½ cup mayonnaise (or Greek yogurt for a lighter version)
- 1 tablespoon curry powder
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup celery, diced
- ¼ cup red onion, finely chopped
- ¼ cup golden raisins or dried cranberries
- ¼ cup almonds or cashews, chopped (optional)
- 1 teaspoon honey (optional)
- 2 tablespoons fresh cilantro or parsley, chopped
Instructions

Dice or shred the cooked chicken into bite-sized pieces.
