A flavorful and creamy curry chicken salad made with tender chicken, warm spices, crunchy celery, and sweet raisins. Perfect for sandwiches, wraps, or lettuce cups, this salad is a quick and easy meal prep favorite.


Ingredients

  • 2 cups cooked chicken, diced or shredded
  • ½ cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tablespoon curry powder
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup celery, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup golden raisins or dried cranberries
  • ¼ cup almonds or cashews, chopped (optional)
  • 1 teaspoon honey (optional)
  • 2 tablespoons fresh cilantro or parsley, chopped

Instructions

  1. Dice or shred the cooked chicken into bite-sized pieces.

  2. In a large bowl, mix the mayonnaise, curry powder, lemon juice, salt, and black pepper. Stir until smooth.

  3. Add the chicken, celery, red onion, raisins, and nuts. Mix until well coated.

  4. Taste and adjust seasoning as needed. Add honey if you want extra sweetness.

  5. Chill in the fridge for at least 30 minutes before serving.

  6. Serve on toasted bread, in lettuce cups, over a salad, or with crackers.

Notes

For a lighter version, swap mayo for Greek yogurt.

Adjust the curry powder to taste—start with less and add more as needed.

Store leftovers in the fridge for up to 4 days.
