Description

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ cups full-fat cottage cheese
  • 2 large eggs
  • ¼ cup milk or buttermilk
  • 2 tbsp melted butter or neutral oil
  • Optional: 1 tbsp chopped fresh herbs (chives, rosemary), garlic powder, or seeds for topping


Instructions

  • Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
  • Whisk together flour, baking powder, baking soda, and salt in a large bowl.
  • In another bowl, whisk eggs, cottage cheese, milk, and melted butter until slightly combined.
  • Pour wet ingredients into dry and stir gently until just combined. Fold in optional herbs if using.
  • Pour batter into prepared pan, smooth top, and sprinkle seeds if desired.
  • Bake for 45-50 minutes until golden and a toothpick inserted comes out clean.
  • Cool in pan 10 minutes before transferring to a wire rack to cool completely. Slice once cooled.
