- 1 ½ cups full-fat cottage cheese
- 2 large eggs
- ¼ cup milk or buttermilk
- 2 tbsp melted butter or neutral oil
- Optional: 1 tbsp chopped fresh herbs (chives, rosemary), garlic powder, or seeds for topping
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
- Whisk together flour, baking powder, baking soda, and salt in a large bowl.
- In another bowl, whisk eggs, cottage cheese, milk, and melted butter until slightly combined.
- Pour wet ingredients into dry and stir gently until just combined. Fold in optional herbs if using.
- Pour batter into prepared pan, smooth top, and sprinkle seeds if desired.
- Bake for 45-50 minutes until golden and a toothpick inserted comes out clean.
- Cool in pan 10 minutes before transferring to a wire rack to cool completely. Slice once cooled.
