1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces

1 tbsp cornstarch

½ tsp salt

¼ tsp black pepper

2 tbsp vegetable oil

For the Sauce:

¼ cup soy sauce (or tamari for gluten-free)

2 tbsp honey or brown sugar

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tbsp rice vinegar

½ tsp sesame oil

½ cup chicken broth

1 tsp cornstarch mixed with 2 tbsp water (cornstarch slurry)

For Garnish:

1 tbsp sesame seeds

2 green onions, chopped


Instructions

  1. Prepare the Chicken: In a bowl, toss the chicken with cornstarch, salt, and black pepper.

  2. Cook the Chicken: Heat oil in a skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown and fully cooked. Remove and set aside.

  3. Sauté the Aromatics: In the same pan, add more oil if needed and sauté the garlic and ginger until fragrant.

  4. Cook the Pineapple & Vegetables: Add pineapple chunks, bell peppers, and onions. Stir-fry for 2-3 minutes until slightly softened.

  5. Make the Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, chicken broth, and cornstarch slurry. Pour into the pan.

  6. Simmer & Thicken: Let the sauce simmer for 1-2 minutes until slightly thickened.

  7. Combine Everything: Return the chicken to the pan, tossing it with the sauce and vegetables. Cook for 2-3 more minutes.

  8. Garnish & Serve: Sprinkle sesame seeds and chopped green onions on top. Serve over rice or noodles.

Notes

  • For extra caramelization, let the pineapple sear for a few minutes before stirring.
