Ingredients
For the Patties:
1 lb ground chicken (preferably thigh)
1 small onion, grated
2 garlic cloves, minced
1 tbsp Dijon mustard
1 tsp smoked paprika
1 tsp dried oregano
Salt and black pepper to taste
1 tbsp olive oil (for cooking)
For the Sauce:
½ cup mayonnaise
1 tbsp Dijon mustard
1 tsp lemon juice
½ tsp garlic powder
1 tsp honey (optional)
For Assembly:
4 burger buns
1 cup lettuce (shredded or leaves)
1 large tomato, sliced
Red onion slices (optional)
4 slices cheese (optional)
Instructions

Mix ground chicken, onion, garlic, mustard, and spices in a bowl until just combined.

Divide into 4 patties and press an indent in the center of each.

Heat oil in skillet and cook patties 5–6 minutes per side until golden and cooked through.

While patties cook, whisk together sauce ingredients in a small bowl.

Toast buns in a dry skillet or under the broiler until golden.
