Ingredients
For the Salad
- 4 cups chopped kale (stems removed)
- 2 cups chopped broccolini (trimmed and cut into bite-sized pieces)
- ½ cup dried cherries
- ¼ cup sliced almonds (toasted)
For the Maple Vinaigrette
- ¼ cup maple syrup
- 3 tablespoons apple cider vinegar
- 2 teaspoons Dijon mustard
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup extra virgin olive oil
- ¼ cup sliced almonds (toasted)

Prepare the Kale: Wash, de-stem, and chop the kale into bite-sized pieces. Massage it with your hands for about a minute to soften the texture.

Blanch the Broccolini: Boil water, blanch broccolini for 1-2 minutes, then transfer to an ice bath to stop cooking. Drain and pat dry.

Make the Dressing: Whisk together maple syrup, apple cider vinegar, Dijon mustard, salt, and pepper. Slowly whisk in olive oil until emulsified.

Assemble the Salad: Combine kale, broccolini, dried cherries, and toasted almonds in a large bowl. Drizzle with the vinaigrette and toss well.

Serve: Let sit for 10 minutes before serving to allow the flavors to meld.
