Ingredients

Scale
  • 1 medium beet, peeled and chopped
  • 1 large apple (red or green), cored and chopped
  • 1 small carrot (optional), peeled and chopped
  • 1-inch piece of fresh ginger, peeled
  • Juice of ½ lemon
  • ½ to 1 cup filtered water (if blending)


Instructions

  • Wash and peel all produce. Remove apple cores and beet skins as needed.
  • Chop everything into manageable chunks.
  • If using a juicer, run all ingredients through the chute in this order: apple, beet, ginger, carrot. Collect juice.
  • If using a blender, add all ingredients plus water and blend until smooth. Strain using a nut milk bag or fine mesh sieve.
  • Stir in lemon juice. Taste and adjust flavor as needed.
  • Serve chilled or over ice.

Notes

Use organic produce whenever possible for best flavor and fewer pesticides.

Add orange or pineapple for a sweeter variation.

Store leftovers in a sealed glass jar in the fridge for up to 48 hours.
